Hailing from Lyon's gastronomic scene, Mathilde Walisko is no stranger to the world of haute cuisine. Having worked in prestigious establishments such as Pierre Orsi and Le Bistrot du Potager, she has distinguished herself through her rigor and creativity, even earning the title of Vice-Champion of Europe for offal . Her mastery of cooking techniques and her attention to detail enrich the identity of Rosebud.

Far from conventional approaches, Teo and Mathilde have chosen the path of total collaboration. Each dish on the new winter menu is the result of constant dialogue. The goal? To combine rigorous technique and respect for tradition with a touch of modernity and indulgence.
