Ricotta tortellini

Spinach and hazelnuts, butternut squash cream, roasted butternut squash, grated pecorino cheese, and baby spinach. €16

Nigella seed shortbread, candied lemon gel, Jerusalem artichoke chips, and dill foam. €16

 

Stuffed morels

Stuffed with poultry and flat-leaf parsley, morel mushroom consommé with baby vegetables, celery mousseline, raw Brussels sprout leaves, and a turmeric lace tuile. €17
